Description

Here’s a cupcake that is fall-inspired with apples and a caramel topping.

Ingredients

  • 2 whole Granny Smith Apples
  • 1 package (15.25 Oz. Size) Carrot Cake Mix
  • Additional Required Ingredients Specified In Mix Package (typically Water, Eggs And Oil)
  • 20 whole Caramels
  • 3 Tablespoons Milk
  • 1 cup Pecans, Finely Chopped
  • 12 whole Popsicle Sticks (cut In Half)

Preparation

Core and cut the apples into smaller bits.

Mix up the cake mix as per the instructions on the box (you’ll typically need water, eggs, and oil, as directed in the mix package). Add the apples bits to the mixture. Mix until the apples are incorporated evenly in the cake mixture. Place cupcake liners into a muffin pan and fill each one ¾ full with the cake mixture. Bake in a 350ºF oven for 25-30 minutes or until a skewer comes out clean when inserted. Remove once cooked and set aside to cool.

Melt the caramels with the milk in a saucepan on the stovetop over a very low heat. Stir until caramels are completely melted and the mixture is like a gravy consistency. Allow to cool for about 20 minutes. Spread the top of the cooled cupcake with the caramel. Dip the top of the cupcake into the ground pecans. Insert half a popsicle stick into the center of the cupcake.

There, you have your caramel apple cupcakes. Enjoy!

Just made these, but with one little change, I only made a 1/2 recipe. When I do this For a cake mix I use 2 eggs then 1/2 of the water(I use milk) and oil (well a tiny over half). The cup cakes were very flavorful and moist. Very good. But I think I would prefer a lighter/fluffier caramel frosting or perhaps even a cream cheese frosting with just a hint of peanut butter in it. A deffinite do again recipe. Thanks for sharing.
