The ice cream base is my new favorite vanilla. I would recommend letting it set fully, maybe make it a day ahead. Ours was partially hard and still good, but if you want it firmer make ahead. The other difference we made was I didn’t add the graham crackers to the base, we made a graham cracker crust with a little butter and sugar and sprinkled it on the pie filling. It was divine.
