Description

A Cozy Kitchen is desperately trying to hold on to summer with these blueberry crisp bars.

Ingredients

  • 3 cups All-purpose Flour
  • ¾ cups Sugar, Divided
  • ½ teaspoons Cinnamon
  • ½ teaspoons Vanilla
  • 2 teaspoons Milk
  • ½ cups Butter
  • 3 cups Blueberries
  • 1 Tablespoon Lemon Juice

Preparation

Mix together the flour, 1/2 cup of the sugar, cinnamon, vanilla and milk. Cut the butter into the mix, and knead into the flour until it begins to look like coarse crumbs. Squeeze some of the mixture in your hand; it should stay intact and form a ball, but should break apart easily with your fingers. If it won’t stay together, add more butter. If it won’t come apart, add more flour. Pour half of the mix into a greased 9×13 baking dish. Press down firmly until it forms a crust.

Toss the blueberries, remaining 1/4 cup sugar and lemon juice together. Pour the berries over the crust and spread evenly along the first layer. Sprinkle the rest of the crust mixture over top and lightly press into another layer.

Bake in the oven at 350ºF for 30 to 40 minutes, or until the crust begins to brown. Allow to cool, and then cut into deliciously imperfect bars of berry goodness.

Updated to add that these bars are great, but they are fantastic chilled! It intensifies the blueberry flavor.

These were great and not sweet at all!!! We loved the shortbread crust. I also had to use a 1/4 cup more butter, but it turned out perfectly after that! Definitely a tasty little treat.

After adding about 1/4 cup more butter than the recipe called for I finally had a gorgeous dough that made a ball but would crumble apart easily. I layered this in a 9×13 pan, topped with the blueberry mixture then added the remaining crust. Tips: You’re going to need more butter, and likely more blueberries – I’m a bit of a fanatic so I will use a whole bag of frozen next time.

I mixed some white sugar with vanilla and sprinkled this concoction on top of the bars while they cooled. It hardens to a sweet crisp and is the perfect topping to a perfect blueberry bar.

These are not sweet and will disappear in seconds!

(Note: It will feel awkward to mix the small amount of milk and vanilla into all that flour, but trust it…thanks for the recips TS!)

I made this recipe yesterday – flavor was wonderful. The fresh blueberry taste was amazing. Only problem I had was I think I should have used even more butter than I did. The bottom crust set up correctly, but my top was mostly flourly. So I just tap off the excess prior to serving.

These blueberry bars were a hit! I was looking for something to take on a day trip and they were just the thing! I thought about adding a little more butter and some oats…but my husband says he likes them just the way they are! :)

My husband and I really like this recipe. I did also add 1/4 c. more butter to hold everything together a bit better. I did swap out some of the flour for some white whole wheat flour to make me feel better about serving it for breakfast. :) There is just the right amount of sugar. Tasty but not overly sweet. Thanks!

I made these bars after reading the reviews, added a smidge less than 1/4 cup extra butter. I still had the problem of the top layer being a bit floury. Tapped off the excess. Next time, i may just make the bottom layer thicker and less topping on top, and a bit more butter as well. The bar was sort of flmsy–perhaps i should have pressed it down more firmly? That being said, it had a wonderful flavor. I had fresh blueberries from Michigan I just had to use here.

These bars weren’t really sweet enough for me, but with homemade vanilla ice cream they were awesome! Like the other review, I had to add more butter and I also added a few oats for the sake of texture. Make them the day before eating them and allow the flavors to get to know each other, they’re much better a few days after baking!

What a great treat and not sweet at all!!! We loved the shortbread crust. I used a 1/4 cup more butter, but it turned out perfectly after that! We actually ended up placing these in the refrigerator and like them even better chilled. It seemed to intensified the blueberry flavor.
