The flavor of these bars is excellent. I found however that an 8″ x 8″ pan made the bars fairly thick and mine did not cook in 20 minutes. It took them about 45 minutes to cook. I’m not sure if this is due to my using Earth Balance Shortening instead of butter? After they finally cooked, they were delicious!

Everytime I walk into the kitchen, my feet take me on autopilot to the pan of these cookies. The butter/ oatmeal/ coconut combine in a wonderful way. I doubled the vanilla. So good!

OMG, I made these because the story was so sweet and I like all her recipes so far. The bars are so good it is crazy. I have never had anything better. They are my favorite new dessert love love love

These are really awesome. I typically don’t like coconut so I wondered if I would like them. But I love a good oatmeal cookie. And these are super. I didn’t really even notice the coconut texture but it did add a nice extra flavor component. Since they are in bar form they are nice and chewy which is a must for any cookie that I make. You gotta try these!

These sound great…I’m all for doubling coconut! Just curious what types of dried fruits were in the original recipe…raisins at least I assume. I may add some in …or chocolate chips…decisions decisions…!
