These cookies have been my favorite for years…in fact, I just made them again this week. We’ve never used cinnamon chips, though, but it sounds amazing. I added fresh minced ginger and finely minced apple once, which tasted great but the apple may have contributed too much liquid to the recipe.
And, yes, I second that the recipe makes a ton of cookies!
