		<description><![CDATA[Our family just went Gluten free less than a week ago, and one of my husband&#039;s favorite treats are Peanut Butter Cookies.

I am NOT a baker.  I can barely make cookies.  I have about 3 or 4 recipes that, after 10 years of practice, I have been able to make.  So, on this new journey, I was looking for something easy!

I ran across this recipe and had to make it.  I turned on the oven and gathered my ingredients (in one hand practically!).  I was done mixing everything before the oven warmed up!  

While I waited, I split the sticky dough (I used two large spoons to mix everything) into 8 servings (they were large!) and placed them on the cookie sheet.  

The oven still was taking its sweet time, so I washed the bowl and spoons and wiped down the counter.  I almost solved the age old question...What came first- the chicken or the egg, but the oven beeped at me to let me know it was hot!  At last, I got them into the oven!

8 minutes later...there they were.  The house smelled wonderful.  They weren&#039;t completely done in the center. I will make sure to make them smaller next time.  I popped them back in for a few more minutes and then I took them out because I couldn&#039;t wait any longer. 

Taste-wise, they were AWESOME!  Texture-wise, they were needing improvement.  I am going to try to use a finer sugar, when I figure out how to do that in my food processor.  The sugar granules were undissolved, but overall, we both really liked them!  I will make these again and again!
