This barbecue rib rub will make your weekend better.

Combine spices in a bowl and whisk together. Or put them in a bowl with a lid and shake.

To use, rub the spice mixture all over the ribs: front, back, sides, and again. Cover with foil and refrigerate overnight. Then bake, covered in foil, at 225°F for 7–8 hours.

About 1 hour before you’re ready to serve them, take them out and slather them with your favorite barbecue sauce. Either place the ribs back in the oven (uncovered) for 30 minutes to 1 hour, or grill over medium heat, to caramelize the sauce and seal in the flavor. Serve immediately.

Note: This recipe yields approximately 1 cup of the rub, enough for 2 to 3 slabs of baby back ribs or 1 slab of spare ribs, which will feed approximately 4 to 6 people.

Salmon is so quick and easy to prepare and today I'm dressing it up a little with this delicious mix of dried herbs and spices that compliment the salmon beautifully. This recipe makes 6 tablespoons, enough to season six 1 1/2 pound salmon fillets.

Place all ingredients in a bowl and whisk together well, being sure to break up brown sugar clumps.
Transfer dry rub to an airtight container and store in a cool dry place.

To use:
Preheat oven to 425ºF. Place a salmon fillet, skin side down, in a baking dish or on a foil-lined sheet pan sprayed with nonstick spray (or use nonstick foil). Brush top of salmon with olive oil and sprinkle liberally with dry rub (I used about 1 tablespoon for a 1 1/2-pound fillet). Roast uncovered in center of the oven until cooked through and salmon flakes easily (approximately 10 minutes per inch of thickness). The FDA suggests salmon is safe to eat when it reaches 145ºF.

Preheat oven to 350ºF. Grease mini muffin pans.

In a large bowl, mix together sugar, flour, cocoa powder, baking powder, baking soda and salt. Crack in the egg, spoon in the sour cream, and pour in the oil and the vanilla. Mix with a wooden spoon until just combined. Pour in the boiling water, and slowly mix until smooth and liquid.

Carefully spoon batter in the donut pan only filling halfway full. Bake until risen and browned, about 8–10 minutes. Let cool on a wire rack.

To prepare the matcha glaze, whisk all ingredients slowly until slightly thickened and completely smooth.
Dunk each donut into the glaze, and place it on a wire rack. Let glaze set for 5 minutes.

I made ribs for my grown nephews this summer and they were emphatic that these were "the best ribs they had ever had!" So here's the rub so you can try it, too!

Mix all ingredients together thoroughly.

Note: This should make enough to do at least 6 pounds of pork ribs. To use, let ribs come to room temperature and place in a foil-lined cookie sheet/baking pan. Coat liberally with rub on both sides. Cover with foil and bake in a 275ºF oven for 4 hours. Remove from oven and take off top foil. You can serve at this point or you can coat with your favourite BBQ sauce (my current favourite BBQ sauce is House of Q’s Rockin’ Red sauce) and bake uncovered for another 15 minutes or so to caramelize the sauce. My favourite way to enjoy this is to put on the sauce and grill for 15 minutes.
