Also it says to drain in the morning the processed cucs, onions and pepper then add spices and bring to a boil. With no liquid how can it boil without sticking?

Super easy recipe to follow with excellent results. You will never purchse store-bought pickle relish again. This has a much better taste and has proven to be very good on hotdogs, in deviled eggs and homemade potato salad. This yields approximately 7 pints of relish. With a combination of its excellent taste and extemely prolific cucumbers, I have made two batches of this just this summer. Thank you so much for taking the time to share this recipe.

What type of vinegar do you use for this? I was thinking maybe apple cider vinegar, but I thought you might have used white vinegar as well.

Thanks!

I scaled the recipe to 2 servings... I found the relish to be delicious and exactly what I was looking for, but I did find it a little too vinegary for my tastes. My hubby thought it was perfect though. I think that next time I will use a little less vinegar, maybe it was too strong since I had scaled the recipe down?
I only had brown Indian mustard seeds, but I don't think it made too much a difference!

Thanks for sharing, we live in Eastern Europe where cucumber relish is only sold in specialty shops that sells international imports! I just saved loads of moula!!
This is definitely going on some homemade grilled burgers over the weekend!
