I didn't have any vanilla beans on hand so I used a cap full of vanilla extract. Very delicious and I sometimes find myself eating it straight out of the jar with a spoon!

Wowza. Love this. When I put the peaches back in the crock pot after blending them, I thought they needed a little more oomph, so I added some liquid stevia and cinnamon. The end result is super amazing. Eating this in some greek yogurt right now! Thanks, Heidi!

I made this yesterday with some peaches that were going soft. Delicious. I did add a bit more sugar. I used about 1/3 cup. I didn't bother peeling the peaches either, considering I was blending the entire thing anyway. I will certainly make this again.
