		<description><![CDATA[hisirishgem,  I don&#039;t do the whole water bath thing. My grandmother didn&#039;t, my mom doesn&#039;t, and neither do I.  I just make sure I put the chow in the jars while still good and hot, and they seal themselves. They should all be done by the next day at the very latest (you&#039;ll hear popping for the rest of the day as they seal). If you want to use a water bath approach, I&#039;d say 10-15 minutes would suffice.
