Pretty decent recipe. The first waffles flavor was rather flat. I added about 2 tsp vanilla and 1/2 cup date palm sugar ( brown sugar would do, I used date palm because of a lower glycemic index), which helped the flavor, and I also added some dried cherries and chocolate chips. Also I needed to turn my waffle iron to high heat and to get more of a belgian crisp cooked the waffles for about 8-10 minutes. The waffles were still tender, but held together nicely.
Very simple to make, made about 6 good sized waffles, and a decent recipe for a healthier version of the breakfast classic

Seltzer water? Hmm! Interesting! Spelt is my very favorite kind of flour (too bad it's not easier to come by), so I'll give your recipe a try next time I have some in the pantry. Thanks!
