As written, I found these to be extremely dry as well. I could hardly get that amount of bisquick mixed in. This time I tried it with just one cup of bisquick and they were a tad greasy. Maybe 2 cups worth is the magic number? I will try them again b/c they are super easy.

I just noticed that a few people said in the review that their sausage balls were dry. I've been eating sausage balls made this way since I was just a child, and have never had them taste dry. They are always moist when coming out of the oven, and that's when they are my favorite. I usually store mine in a Ziploc bag in the refrigerator, and when I want one I'll take it out and microwave for a few seconds. It makes them taste fresh again! I hope this helps with the dryness that ya'll have mentioned. :)

These were very, very dry for me. After baking a couple test balls and only being able to taste the biscuit mix I added an egg mixed with 1/2 cup milk to the sausage mixture. It did help them become a bit more moist. I may try again with only 1 cup biscuit mix and add some seasoning to give these guys some flavor. However, a couple people did ask for the recipe. I love the concept though. Thanks for sharing.

I made these for Christmas morning and couldn't stop eating them! They were a bit dry but still delicious. I probably should have cooked them for the 20 minutes rather than 30. I think they would be wonderful dipped in maple syrup. I think the next time I make them I will make sure I have some on hand.

They were very tasty although mine came out a little dry (okay a lot) dry. I had to add some water when i was mixing it to get it to stick together. I saw on the blog post you said not to use pre-shredded cheese. I didn't see that until after. That might have helped the moisture level. Still overall they were very good.

Perfect sausage balls. I have used a recipe for years that calls for 2 cups of Bisquick. I did not make them often because they were greasy. Using this recipe and baking them on a roasting pan cuts down on the grease and I don’t feel as bad serving them to my 7 year old for breakfast.

No, you do not have to cook the sausage before mixing. Use the sausage raw to mix the dough, and it cooks in the oven. :)

So, for sure, you don't cook the sausage before hand?
I'm going to make these tonight.
Just raw sausage and then cook it in the oven, right?
Thanks!
