so flavorful. I had mushrooms I needed to use up, added those. Also took the suggestion above and served with a fried egg on top and it was great!

Made this for my husband last night. He loved it. I served eggs over easy on the top and used spicy sausage. Delicious.

Melanie, I would probably try using hearty mushrooms to replace the sausage (I’d saute them first and make sure to cook off all the liquid), and then maybe add some smoked paprika for the smoked flavor, or maybe top it with some smoked Gouda or mozzarella. But maybe that’s just me because I love mushrooms and smoked cheese and welcome any reason to use them.

Have you ever poured scrambled eggs and cheese over ?this, then baked in the oven to set? Reaslly sounds good to me…
