My husband and I have been trying to eat healthier in the morning and oatmeal seemed to be a great choice, however, morning time is tight and plain old cooked oatmeal was getting boring. My daughter suggested overnight oats but so many of the recipes were watery or bland. This is our FAVORITE overnight oatmeal recipe! We make it the evening before exactly to the recipe specs and in the morning we pop it in the microwave just long enough to warm it up. The peanut butter and banana make it delicious and hardy and we have used plain skim milk as well as almond milk - both delicious. Sometimes we add fresh fruit or a sprinkle of mini chocolate chips before serving. This recipe has changed our morning breakfast routine for the better - thanks for sharing!
