These were delicious! I'm so excited to have found a pancake recipe that's relatively low-calorie. My boyfriend and I thoroughly enjoyed these after going for an early-morning run. I only made half the syrup and it was still too much for us, but I was able to use the leftover on carrot cake oatmeal the next morning. Thanks for sharing this recipe, and your other low-cal pancake recipes! Just a note in case anyone is curious, it took 4 large eggs to get 1/2 c. egg whites. That was a tad more than 1/2 cup, but 3 egg whites wasn't enough.

These were really tasty. The pancakes alone were subtly flavored with a good texture from the egg whites. The syrup was amazing. My kids put the extra over popcorn. : ) I only had all-purpose flour but it still worked fine. I’m sure it would work even better with the pastry flour. Also, notice the serving size is 4 pancakes per serving. It may feed more than 2. :) Thanks for a great recipe!
