Can you tell me what Kern’s Apricot Nectar is? I know that is a brand, but is the nectar just a pure juice? We won’t have this brand where I live (France) so I want to know what to look for. My son is allergic to dairy, so I might try these for him. Thanks!

I used apricot nectar to make these. They were simple to make & tasted delicious. I, too, had to add more liquid to get them to the right consistency. Sure gives me an easy & tasty way to use up all the apricot nectar I was given!

I actually prefer a bit thinner pancakes. If you want them thicker, try adding more flour. A thicker batter will generally lead to a thicker pancake.

Mixing the oil “carefully” is merely to avoid mess. Perhaps the word is not needed.

I’ve always used box mixes because I couldn’t find a ‘from scratch’ that I liked. I was out of a box mix and decided to try a new recipe again. I won’t be going back to the box!! I loved the flavor, consistancy, everything!! I did end up adding more milk, but I do that with all pancakes, the kids like lots of thinner pancakes!! Thanks for sharing!!

I love the nutty flavor, but I had the same problem I have with most pancake recipes: flat pancakes! I don’t want to blame the recipe as I’ve had this issue before, but I think more detail would be helpful, particularly where the directions indicate to add an ingredient “carefully”.
