Just made these on a whim. Was a little skeptical about the coffee, but they really hit the warm & sweet 9p.m. spot. And I am betting tomorrow morning they will hit the 9a.m. spot too. Thanks!

Wow, what a treat. I made these this morning . Just what I was wanting for a gingerbread pancake. Definitely will make again. I will also take this recipe to work, so the cafe chef can make for us. Thanks for the recipe. BIG hit.

My boyfriend is notoriously finicky about me making basic dishes too “fancy;” so I made these one morning without telling him what they were first. HUGE success! The flavor is so subtle and the texture is so perfect that I didn’t even mind that I now had 17 zillion pancakes for only two people.
