They cook up fluffy. Mine tend to fall when I take them off the heat, but the taste is awesome! We light to add blueberries to the pancake as they are cooking on the first side. Maybe this causes the pancake to fall? Don’t know. Don’t care! This is our go to recipe. Love that it doesn’t make a ton of batter for the two of us. But am sure the recipe could easily be doubled (tripled) to accommodate more. Thanks for a wonderful recipe!
