He gobbled them up and said they were great! I was a little concerned about the carrots not cooking very much. I think next time, I might try to grate them more finely. Overall, very tasty, though. They were a cinch to make and fluffed up very nicely (thick batter = thick pancakes). Thanks for sharing!
