I went a little crazy when it was beet season here in Nepal and then was looking for more ways to use them up, and came across this recipe. My kids gobbled them up! My son promptly requested “pink pancakes” for his birthday dinner. They have become a regular on our dinner rotation now. Just for curiosity, I tried them with carrot puree tonight, as beets are harder to find right now and they are really tasty too!
