This ended up being delicious! I reduced the amount of sugar in the syrup to about 3/4 cup brown sugar which we liked. My only problem was that the pancake took much longer to cook than I had expected -- 30+ minutes (I used a pie plate). Finally, make sure to let it cool for the suggested 5-10 minutes since that helps the pancake set! Overall, a very good recipe.

This was excellent! I made it for brunch for my family and they loved it. Very easy and delicious. I used a cast iron skillet (well buttered) and melted butter (in place of applesauce) and it came out just fine. I was panicked though as I didn’t read those suggestions until AFTER I put it in the oven. It will definitely be a regular on our menu. Oh, I should add that I doubled the recipe and the baking time for my 9 inch iron skillet.
