Soft pillows of deep fried fluffiness coated in sugar.
Sift together the flour, sugar, salt and the zest of one lemon.
Dissolve yeast in warm water
In a small bowl, combine: the eggs, milk and oil. Add this mixture to the dry ingredients and then add the yeast, mixing well.
The dough will be wet and batter-like. Place the dough in a well oiled bowl and cover with a damp cloth. Let rise until it doubles in size.
Heat oil for deep frying. Drop dough balls into the hot oil by the teaspoonful, until brown.
To test for doneness: Using a toothpick or a skewer, insert into the center. It should come out clean when fully cooked.
When brown, pull the doughnuts out of the oil and drain on a paper towel.
Put about 1/2 cup of sugar in a brown paper bag. While the donuts are still warm, place them into the brown paper bag and shake to coat the doughnuts.
