I find it funny it took me two and a half years to finally make these. The substitutions I made was using basil for the fresh herb since that is what I had, Canadian bacon, and a small yellow onion. I liked the flavor. Mine were firm. The only reason I didn't rate 5 stars was the difficulty getting them out of the pan. I scraped about 2 muffins worth out. Recipe did not say to spray tins and I didn't in spite of thinking about it. Next time I will!

Very tasty little recipe. I think you could take the basic recipe/idea and use your favorite add-ins to make it your own. Since I have celiac disease, I left out the flour. (I know I could have used GF flour, but whatever, I just left it out.) When hot from the oven (without flour) they were easily crumbled - still very tasty. Cold for breakfast the next morning the bites were firmer and still very tasty.

I am looking forward to trying these. I am a protein girl for breakfast. I figure these at 220 caloires for 6 pieces, with 15 grams of protein and 3 of fiber. My kind of breakfast! Thanks!
