Who doesn't love breakfast for dinner? This hearty dish makes the cut! Having diced and frozen peppers and onions reduces prep time. I diced the potatoes pretty small to be sure they cooked through. A little cheese on top is a nice touch as well. I look forward to making this again!!

This is a great hearty meal. After making it twice , I would do the following to speed it up and simplify: cook the bacon in one skillet while cooking everything else in butter in another skillet. I would also parcook the potatoes in the microwave to soften them up a bit or else they take a while to cook. Then I would fry the eggs in some of the bacon grease and slide on top. This way you don't have to turn on the oven and can watch the eggs more closely to make sure they are not over or undercooked. (I'm lousy at baking eggs!).
