Yum! I’d forgotten about these–we’ve always called them ‘eggs in a hole,’ too. Love them!

We also make them – but call them one eye- egg sandwiches. I love to use different cutout shapes, some time the kids get hearts, a sun, a pumkin or a tree (depends on my whim and the season). A family weekend breakfast favorite!

I ate these growing up, but my grandmother called them “toad in the holes”. They are delicious and take me back to my youth. I now make them for my kids.

Too funny that everyone has a different name for this. In my family it was called “Egg in a Nest”. Yum!

I’d never had these then my mother-in-law made them for my son. She called them Mickey eggs (here name was Mickey!)

So we have them all the time just with a different name.

I absolutely love these! I’ve never tried leaving the hole in for awhile, I’m going to have to try that.
