I fixed this on a whim for an office "goodbye" breakfast for one of our employees transferring to another office. It was such a hit that the pan was empty within 5 minutes of me bringing it out. Everyone wanted the recipe! My only complaint was the cooking time. After 20 minutes at 325 degrees the eggs were still runny. I ended up cooking it almost 45 minutes but after that it was perfect!

I was looking for something to make next week for Easter brunch. I assembled this last night and we had it after we got home from church this morning. This was a very yummy recipe. I did do a few things differently though. I made my own pita chips. Also I used 8 oz of cream cheese, drained half of the bacon grease from the pan and cooked the mushroom in the grease; I then cooked it for 20 minutes in a 350 oven 'cuz 325 did not seem like it would set the eggs. I will be sure to make this again! Thank you!
