Love these and I even got a thumbs up from the husband. Easy, quick morning breakfast. I make the topping ahead, as make the muffins as needed through the next few days!

Perfect for the kids! I make the egg mixture and keep it in a container to top them in the morning. I have been able to keep it for a couple of days no problem.

I made these for christmas morning and everyone loved them! I doubled the recipe and there was a lot left. We ended up eating it for breakfast again the next two days. I caught my grandpa eating it with a spoon right out of the fridge and I will admit I stole a few crackers full myself. So yummy!

These were ABSOLUTELY delicious and so quick and easy to make! These are now on my list of fav food for company!!

These were good, easy to make, and a great thing to make before hand for a quick breakfast. The taste was a little underwhelming, like a previous reviewer had said. I didn’t care for it too much but my husband and DD(9) loved them!

So YUMMY! I did add a bit of diced green onion and a dash of cayenne…
Felt like a lot of work when I was mixing it up – but then again, makes for a super fast breakfast!

These were delicious and easy to make! I tried it cold (egg salad) but didn’t much care for it. Once it was toasted on the english muffin wonderful things happened and it was delicious! Everyone loved them. I’ll definately have to make these again soon!

I wasn’t sure if this would go over with all of my company but everyone loved it and no one had any idea that it was actually hard boiled eggs! The second time I made these I toasted my English muffins and put my oven rack lower so that I could really heat everything up and get it nice and brown. Worked perfectly. I also love this mixture as a sandwich spread and have toasted it and served it cold. Terrific recipe for company!
