I definitely make these often – they are my go-to comfort dinner when I’m home alone! The more butter, the better, although I think it’s a fine balance between reaping the benefits of the eggs vs. heart attacks…And ps, if you add bacon, all the better, I call them “bad eggs”, because they can’t be good for you!

May be my taste changing with my age. For myself, I add grilled chopped onions.
