I made this for 60 people and everyone said it was the best ever. I had to make a few changes, using turkey sausage because we don't eat pork, and baking it in the oven for one hour at 350-375. I used big foil "brat" pans, put all the goods -- hash browns, cooked sausage, sauteed peppers and onions, tomatoes -- into the pans and mixed it up, then mixed the eggs, milk and cheese and poured it over the goods. I also added thawed chopped spinach that I'd squeezed to get all the water out. I added cumin and some chili powder to the sauteed veggies and put crushed tortilla chips on top. THIS IS A GREAT RECIPE AND ONE THAT YOU CAN MODIFY FOR A CROWD WITHOUT HARM.
