		<description><![CDATA[I would never have thought to cook an egg on a sweet potato, ever in my life. And I am so glad I did.

It took my sweet potato waaaay too long to cook, but I think that&#039;s because I used a slightly larger and more thin-skinned (therefore more fleshy) farmer&#039;s market variety. So, I definitely need to play around with cooking times. However, once I got it together, OH MAN was it delicious. 

I&#039;m going to try boiling the sweet potato first, to see if that gets it softer better than microwaving. The ideal here would be to have a soft sweet potato with just a slightly runny, or at least not solidly cooked, egg. YUM.]]></description>
