I've tried a lot of "energy bites" recipes over the years, but this is the first one that I really truly loved. It holds together really well, the flavours are perfect, with just the right combination of softness and crunch. The only modification I made was that I used blanched sliced almonds (so they are slightly softer), and I gave them a rough chop to make them smaller pieces before mixing them in. I froze them on a tray before putting them in snack bags and then kept them frozen until we left for our camping trip, and then they functioned as an "ice block" in the cooler until the day they were designated for breakfast. They were quite a hit with my entire family, all 4 kids asked for more, as did hubby! These were a perfect compliment to our morning while camping, and will definitely be making them regularly.
