I chose this as a "make ahead" meal for most recent our camping trip. I cooked the quinoa with vanilla extract and a touch of maple syrup to give it a little softer flavour, and I added chopped pecans to the topping, but otherwise followed this exactly. It was perfect! I often find that oatmeal breakfasts don't last long when camping, because everyone is so busy and active and they all come asking for snacks by 10am. But this had that "stick to your ribs" goodness that kept everyone happy until lunch! Very filling, and the flavours are absolutely delicious. This will be a part of our family's camping tradition for sure, as well as on regular rotation for our everyday breakfasts.
