I really enjoyed this. It was a declicious and easy way way to have breakfast ready in the fridge to grab and go. I used regular oats and added walnuts for additional protein and crunch. I made it in the crockpot to avoid heating up the house and it worked really well- about 45 minutes on high and maybe 2 hours on low, but I will probably put it on low the whole time next time to avoid overcooking the edges slightly. I put it in individual containers in the fridge and just gave it a quick minute in the microwave and added craisins. Yummy, healthy and filling enough to set me up for the morning!

I finally made this and it is delicious - very different from traditional stovetop oatmeal. It is already very delicious not having to add the maple syrup because I didn't have it, so I can imagine it tasting even better with the maple syrup. I used old fashion oats - reduce the brown sugar to 3/4 cup packed, used 1-1/2 cups unsweetened coconut milk and 1 tsp. vanilla (because I didn't use maple syrup). Next time I am thinking of replacing the vegetable oil with coconut oil for a healthier fat. I ate this with unsweetened coconut milk poured on top of my baked oatmeal and enjoyed every bite. I'm sure this will be good sprinkling toasted nuts and unsweetened coconut on top, if you're not watching your calories.

Made this Sunday morning and it is yummy! I added chopped granny smith's and pecans on top on day and craisins, walnuts and apples another. It is awesome and even has my boyfriend eating oatmeal! Thanks for sharing.

My family loves baked oatmeal. I add flaxseed and sugar free raspberry preserves to mix it up a little. The recipe is great as a base to eat as is, or add fruit or other additions to make it your own!

I made baked oatmeal this morning following the directions, and we all liked it! It was a bit sweet for us, so next time I will reduce the brown sugar to suit our tastes.

Tastes like a crumbed granola bar! Yum!

Thanks for a great recipe!

I made it this morning and shared it with my roommates. One of my roommates loved it so much that she said whoever invented this recipe should be given a card or a really big hug haha. We all loved it so much! Thanks for sharing and making our Sunday morning fabulous!

This looks so good! What a time-saver. I wonder if it would work with steel cut oats?
