Made these for my husband to take to work today and have been getting forwarded emails of their delightfulness! I tripled the recipe, and used all mini-chocolate chips, about 7/8 of a bag. I also only had Nescafe instant coffee, but used the 100% Columbian for a stronger flavor. For the frosting, I used half regular roast Nescafe and half French Vanilla roast, and then topped them with the reserved mini chocolate chips. Total bonus was how yummy my kitchen smelled while I was making them! Thanks for a wonderful recipe!

Delish! Very rich and sweet, even without the icing...which I did not use this time around. Next time I make this, I might user fewer chocolate chips because the chocolate taste slightly overwhelms the coffee taste. But otherwise, perfection!

I decided to make mini muffins when I saw the amount of batter and subbed mini chocolate chips. I ended up with 16 I'd be interested to know how many others got. I don't think it would make 12 if you use a regular size muffin tin. They taste great! I love the idea of using the Via. Thanks!

2 packets of via come out to be able 1 tablespoon
Also, just a tip, when the milk it warm, let it cool down a little or else your egg will cook if your milk is too hot!

I knew I had to make these as soon as I saw them featured on the blog last week. They are as delicious as I'd expected. Easy to make with drool-worthy results. What more could I want? I think there's a fine line between muffins and cupcakes, especially once you throw frosting into the mix. I topped mine with my favorite coffee buttercream and made a few other changes before I re-branded them as cupcakes. I substituted Nescafe instant coffee (as a previous reviewer suggested, I used enough to make two cups of coffee), upped the sugar to 1/2 a cup, used melted butter instead of margarine, and swapped in 1/2 cup of mini cinnamon chips and added 1/4 cup of mini chocolate chips at the end. Absolutely delicious! Thanks for this winning recipe.
