		<description><![CDATA[Yummy!  I had to make some alterations based on what I had.  I replaced all of the oil with applesauce and used  1/2 cup of sugar and 1/4 cup flax seed meal.  I also had to use ground ginger, but I added a tiny bit of crystallized stem ginger too to make up for the bite of fresh ginger.  These were great!  I forgot to add the salt, but I didn&#039;t even notice until I was calculating the calories.  My changes make for 175 calories a muffin, which is great because they are so hearty and kept me going all morning!  Thank you!]]></description>
