Wouldn’t change a thing. It was hard not to just keep eating them till they were gone. One batch made 12 regular size muffins and 24 mini muffins. I definitely will make these again!

I think this one is excellent. Moist…of course it has a lot of oil…and good flavor. My only changes were that I added some roasted sliced almonds along with the vanilla sugar to top off the muffins as well as adding one frozen blackberry to each muffin cup. I would probably add a little more orange zest the next time and a smidge less oil.
