Next time I’ll let the batter sit so the oats can soften before putting them into the muffin pan. There was an almost rubbery texture too, and I can’t figure out how that happened, but it’s quite possible it was my fault.

I’ll try them again sometime and see how it goes. Still, a great taste combination!
