WOW. This is a very easy bread dough to make. Nothing is easier than putting some ingredients in a bowl, stirring everything together and then letting it sit there. The bread tasted delicious! I will be making this bread often.

Just finished making this --- pretty cool! This morning when I looked at it, I thought it had flopped. But decided to proceed anyway. It actually turned out pretty well, and smelled delicious while baking!

I agree with Frank.. a lower temp oven would help with the too hard of a bottom crust.. try baking it a few mins less too.. I found that it was prefectly cooked around 25 mins.. and make sure your oven rack is in the middle.

catsmeow, you said that "the bottom crust was hard to cut".
The original recipe, from Jim Lahey of the Sullivan Street Bakery in Hell’s Kitchen New York, calls for a 450-degree oven. You may try that.

I made this bread yesterday and it was fabulous - got rave reviews from Hubby-honey too. I think I made a mistake though because the bottom crust was hard to cut. The loaf slices easily most of the way through but the bottom has to sawed through. Should I have let the pan cool a bit after I took it out from the 500 degree warm up? I also wondered if I may not have had the loaf evenly distributed in the pan; it came out a odd shape. (The top looks exactly like the picture.)

I definitely want to make this bread again because it's really easy and wonderfully tasty but I'd like to correct whatever I did to get the bottom crust too tough. Can you give me a suggestion?

This bread is amazing! I don't own a dutch oven ( It got lost in a move) so I used my cast iron pans with a cast iron lid. dividing the dough into thirds so they would fit in the pan. not only was it chewy and full of taste , it is the easiest way to make a great loaf of bread! Thank you so much for the recipe! I will be making this alot now!
