Description

Did you know that one slice of Starbucks’s coffee cake has 570 calories and 28 grams of fat? That’s equivalent to a Big Mac. Criminal.

I HAD to find a way to make it healthier.

One slice of MY Apple Crumb Coffee Cake has only 175 calories and 2 grams of fat. It is so moist and so good!

Ingredients

  • FOR THE CAKE:
  • ½ cups Applesauce (unsweetened)
  • ¾ cups Light Packed Brown Sugar
  • 1 whole Large Egg
  • 1 cup All-purpose Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Ground Cinnamon
  • ½ cups Low Fat Plain Yogurt
  • ½ teaspoons Pure Vanilla Extract
  • 1-¼ cup Apples, Peeled, Cored And Chopped

  • FOR THE TOPPING:
  • 3 Tablespoons Light Brown Sugar
  • 3 Tablespoons Flour
  • 1 Tablespoon Butter, Softened

Preparation

Preheat oven to 350F. Spray an 8×8″ baking dish with cooking spray.

For the cake, combine applesauce and brown sugar in a large bowl. Add egg and beat until mixed. In a smaller bowl, combine flour, baking soda, and cinnamon. Gradually add dry ingredients to wet ingredients and beat until combined. Add yogurt and vanilla and mix. Gently fold in apple pieces. Pour mixture into the baking dish.

Combine topping ingredients in a small bowl, using a fork to create coarse crumbs. Sprinkle topping over the cake mixture.

Bake until golden brown and set, approximately 30 minutes. Remove from the oven and allow to cool. Slice into 9 equal pieces.

Nutrition info per 1 piece: 175 calories, 2 g fat, 3 g protein, 35 g carbohydrates

Made this tonight and it is AMAZING!! I used nonfat vanilla Greek yogurt, reduced the brown sugar in the batter to 1/3 cup, and added all spice and nutmeg to the batter! I also added chopped walnuts to the crumble topping!! SO DELICIOUS!!! The hubby had no idea it was low fat or healthy!! THANK YOU SO MUCH for this awesome recipe! Will definitely make it over and over again!

Made it today:
–would add pecans to mixture
–add cinnamon to topping
— it states 30 on 350 oven…..I hate to add 5 to 6 more minutes (maybe my oven)
— love the less butter, very tasty

I made this yesterday but substituted the apples for peaches instead. Mmmm….so yummy!! Thanks for the great recipe!

Very yummy! I did add a touch of nutmeg only because I like it. A little sweet because I didn’t have unsweetened applesauce. I am saving this recipe!

Very good! It’s almost more like an apple bread than a cake, but it is shockingly moist. I didn’t do any substitutions, but I might add some chopped walnuts to the topping next time.

This came out moist and tasty. I did add a couple sprinkles of ground cloves and a pinch of salt to the batter, and added cinnamon to the topping. My Dad and Grandparents love it! So I will make it again.

Super moist! I don’t normally bake anything lowfat but this was worth a try. I made no substitutions but did add a little cinnamon to the topping too. Really yummy!

This cake was amazing. I normally don`t bake low fat, because I`m not a fan of how the texture changes once you omit the butter or oil. Honestly, if I had not bake this myself I would never believe that it was low fat. The texture was perfect; moist and tender not rubbery at all. I think we lost any low fat benefit the cake had though when my husband and I ate 2/3 of it yesterday with a cup of tea. The only substitutions I made was adding some pecans, and using buttermilk instead of the yogurt.
