One hint: to get 12 balls of dough, make them walnut-sized. I think this would be a fun way to involve kids in the kitchen. They could occupy themselves rolling these out and trying to make perfect circles while you were shredding cheese, warming the beans, etc. They stay hot in the stack, too, much longer than store-bought warmed in a towel in the microwave.

My sister teased me about being a "Martha Stewart" when she learned I was making these, but as many reviewers have stated, you won't return to store-bought once you've tried these. What a tasty difference, and cheaper to boot! They were surprisingly quick and easy to make, and I'm a novice baker. A couple of hints: have your griddle hot, have plenty of flour ready to scoop to sprinkle under each one before rolling out so it won't stick (although they're super easy to pick up and put on the griddle), and have two plates ready (one for the tortilla hot from the griddle and one for the tortillas you've rolled out that are waiting to be grilled).

Sorry to be the one who is out of step. This smoked up my kitchen, wasn't quick (with the resting time for the dough), and made a mess. The end result tasted more like Naan than tortillas. I like Naan, but this wasn't worth the bother.
