Last night, I made homemade chicken pot pie. Instead of pie crust, I topped it with a sheet of this biscuit dough, rolled much thinner than I would have for biscuits. It was so good!

I’ve used several recipes for biscuits, mostly that use butter, and I like this one far better. It’s easy, quick, and the result was a very light, very tender biscuit. This is a keeper!

They do bake up very tall and fluffy! They do seem to be best as soon as they are baked (as the recipe states) and didn’t store as well as a butter biscuit. A great, fast biscuit to accompany stew or soup!
