Old cheese has ripened for 10 – 12 months. It taste stronger than ‘young cheese’ which has ripened for 4 weeks. Old cheese is hard (due the water that has disappeared while it was ripening), has more flavor and taste a little saltier than the young cheese.
I think you can substitute it for a cheese that has a strong flavor.
