The bread smells delicious--strong cinnamon and banana aroma. It took almost an hour to bake, not 40 minutes. The strongest taste is still overwhelmingly quinoa, even with all of the other deliciousness, so if you are not a fan of the earthy, carboardish taste of uncooked quinuoa, then you should probably avoid it. It has a slightly bitter aftertaste (also the quinoa, I imagine). I can't taste the beets; they blend in with the other flavors. I am planning to use this recipe during Passover and wanted to test it out early. Not sure I will serve it to company, but anyone who wants some for breakfast and is sick of matzah will probably eat it, even if they don't love it.
