I was looking for a recipe that I could use as a main dish for my vegetarian son during the family holiday meals, and this is just the ticket. It’s billed as an appetizer but we had it as a main dish last night with some roasted butternut squash, and it was excellent. I did use crimini (baby portabella) mushrooms instead of button, and I used my own favorite pie crust recipe, but that was the only substitution. I didn’t even have to add salt. YUM!
