These are great! A recipe has to be super simple or I won't do it, and this one definitely is that. They're tasty little things; not necessarily an entree, but a great side. Leftovers were an excellent after-school-before-sports-practice snack for my kid. I used a non-stick regular size muffin tin, and still got 12. A few stuck but most didn't. Will use this recipe again and again.

I really enjoy this recipe, and so does my whole family! The fun flavour of pizza combined with the goodness of quinoa -- what could be better? I just bake them as balls on a cookie sheet, as my mini muffin tin must not be great, and they stick like mad and don't come out beautifully. I've taken these to potlucks many times, and I never come home with leftovers.
Just a note: "serves 12" does not mean it serves 12 people... it means it makes 12 pizza bites, which in our house serves about 2.5 people. :-) I always double, and often triple this recipe. For potlucks, I usually quadruple it.
