		<description><![CDATA[Fantastic and easy recipe!!  I have never tried the panko--only regular bread crumbs--but I imagine that it would be even crispier with panko!! Which then makes it even better!! It is a bit difficult working with fresh mozzarella because it is very moist--but SO worth it!!]]></description>
