		<description><![CDATA[I do something very similar, except I use frozen Roasted Corn from Trader Joe&#039;s and canned diced tomatoes.  I love it room temp over warm brown rice or quinoa!  I also zest the lime into it, because I really love that lime flavor.]]></description>
