		<description><![CDATA[Wanted to try eggplant for the fist time and decided to go with this recipe.  After starting the prep process I realized I was out of flour and substituted it with Healthy Start Bisquick mix.  Still turned out great.  I ended up making a small amount of dipping sauce (mayo, soy sauce, hot sauce and lime) - which gave it a little kick.  Would definately make again - although maybe cutting the egg plant into bite-sized pieces instead of rings. Thanks for sharing!]]></description>
