Pickle roll ups are one of my favorite appetizers but I never make them because they take so much effort and are gone so quickly. This I can do! I made a half batch for my small family to encourage everyone to eat some leftover pumpernickle bread. What a huge hit! I'll be making this again and again.

Rather than use beef, I always made these with ham slices, cream cheese and dill pickle spears. Messy and took forever!

This is a fabulous short cut! I ended up using the dried beef in the jar, since I was making it the night before, but it turned out great. I think I would like to try it with corned beef or pastrami next. Add a dash or too of hot sauce to giveit a little kick, or maybe some garlic and onion for another variation. The variety you can add is almost endless!

One of my favorite appetizers that I hate to make because of all the work, thanks for being brilliant enough to come up with an easier variation!
