I doubled the recipe and added 8oz. of cream cheese. Perfect for a crockpot dip and while I could stand a bit more spice, the heat is just when serving a large group. Will definitely add this to my party food rotation!

If you’re out of Rotel, you can use a cup of salsa and get pretty much the same flavor!

SERVING VARIATION: Toss a bunch of tortilla chips in a serving dish, ladle over some of this sauce. A few squirts or spoons of sour cream. Oooh!

OR add some taco meat to the above….you got a meal!
